Easy to make, good to look at, great to taste! The Watermill cucina – An added delight to our creative courses: 4. Parmesan lollipops
You may remember that in a previous food blog, on tiramisù, we boasted about one of our longest-ever opening sentences: no fewer than 40 words.
Today, we proudly present our shortest-ever ingredient list: 25 g parmesan.
Yes, that’s all you need to make another tasty item from the Watermill cucina, one which has proved very popular during our evening aperitivi under the dappled shade of the vine verandah.
Throw in a cocktail stick (or rather, place it carefully before cooking) and half an apple for display purposes and you have an appetiser with a definite ‘wow’ factor.
Recipe from the Watermill cucina: Parmesan lollipops
Here’s the ingredient list again, in a bit more detail.
Allow 25 g of parmesan for 8 ‘lollipops’ and one cocktail stick for each lollipop.
And here’s Lois on the method:
- Pre-heat your oven to 180° C. Line a large baking tray (or two!) with greaseproof paper. Finely grate your parmesan (I just put a chunk of cheese in my robochef!) and place in evenly spaced teaspoonfuls on the greaseproof paper. They should be about 5 cm apart.
- Lie a cocktail stick about 1 cm into each small pile of parmesan. Put in oven for 7 mins, or until the parmesan melts and only just begins to change colour – if they turn dark golden they can taste a bit bitter.
- Remove from oven and leave to cool a little. Serve your lollipops skewered in half an apple (or orange), hedgehog style!

Another Watermill aperitivo. Enjoying the house cocktail, waiting for the Parmesan lollipops and for the musicians to start playing under the rose pergola.
